Aubergines can be frozen in in a sealed bag or container for up to 3 months.

How to freeze and defrost

To freeze: Slice and grill aubergine before freezing to prevent it going mushy. Place in a sealed container with a label and put in the freezer.

To defrost: When you take food or drink out of the freezer, it’s important to defrost it safely. Don’t defrost at room temperature.

Eating the whole food

You don’t need to peel aubergines so keep the skins on when you cook them.

Be fabulous with leftovers

If roasting an aubergine whole, prick it with a fork before cooking or it will explode!

Think about buying aubergines loose to help you buy only what you need. This will ensure that all your food is more likely to be eaten and saved from the bin.
